The sugars that Dr. Simeons refers to are the refined sugars that can obviously be bad for you. Natural sugars are an important part of our daily diet. The starches referred to are from potatoes, rice, etc. Phase three is intended to slowly introduce you back into regular foods at a metered pace. Where your body has been deprived of starches, simple carbohydrates and sugars, it will naturally hold onto those but if you slowly introduce those back into your diet you body will be able to much more efficiently break those down.
As far as your concern for the differences in the manuals, Dr. Simeons original manuscript is usually used as a diet aid and reference. When Dr. Simeons developed the diet, injectable HCG was the only way to administer this dieting substance. A homeopathic version did not exist then. When using prescription injectable HCG, you must take a break because it can build to a high level in your system and cause adverse side effects. Homeopathic drops do not build to a toxic level. You are taking much smaller doses more often sublingually verses intramuscular, thus allowing your body to expell any excess much quicker. I hope that this clarifies some of your concerns. Other diet manuals have been written to help people better understand the diet and its process. Those manuals address the homeopathic application of HCG.
One last item to address is the use of medications on the diet. Only your attending doctor can modify your medication needs and uses. Homeopathic hcg works very well with most perscription medications.

Your doctor can make some adjustments to the diet based on your specific needs. As far as the load days, you do not need to eat fatty foods in excess. Listen to your body. Question I was doing really well on the diet but the last couple of days I started gaining weight. I have gained 2 lbs. I did not change the strict diet and I am drinking 80oz of water a day. Just wondering if I should be concerned.

Sodium intake can also be the cause of weight gain and of course, if someone cheats with a sweet treat or something fatty, it can most certainly disrupt your diet.
